The next stop on our tour was the Toudra Gorge. Here, we had lunch at a carpet co-op. The co-op is for women (widowed or otherwise destitute) to work and earn a living. They made the BEST couscous I’ve ever eaten. How much have I talked of the food on this trip? My instagram followers got eyefuls of it (a later post, perhaps). Did you know that couscous is not a grain, but is made from scratch? I don’t know how yet, but I’m determined to try it at some point. It’s a several hour, hand-rolling, multiple steaming process. So tasty! Not the 5-minute variety that comes from the grocery store. After lunch we were shown how the sweet mint green tea is prepared. And then they brought out carpets for us to purchase, is we wished. They come in various colours and textures and varieties of wool and silk. (Not silkworm silk – agave silk.) One lady showed us how the wool is carded and spun, another worked at a loom making rugs.
